Last Thursday Sens hosted a 4 course chocolate dinner with Hotel Chocolat chocolate in every course. The night before I was delivered one container of a liquid chocolate mix and was asked to make pot de creme for a TV shoot the next day.
It's a good thing I know how to bake. Because I looked at the recipe and thought, "this is not going to work," but I had to follow it anyway. Seems that when the recipes was converted from metric to our ounces, some important numbers were omitted. The recipe I had on hand ruined the one and only container of the mix which had been carried into SF from London by Angus Thirwell, co-founder of this new chocolate company.
The recipe was for a caramel-chocolate pot de creme, so I made one from scratch instead. A small quenelle of whipped cream and a garnish of cocoa nibs, my own personal garnishing style, was placed on it the next day and given to a messenger to get it to the TV studio.

Anita-- chocolate pot de creme needs neither eggs nor an oven to set up. Chocolate is like that-- it firms greatly when cool...
