You now have all been warned in advance: my next class will delve deep into an endlessly useful and delicious pastry: one which houses supple creams and dry salty cheeses, loves being dipped in caramel and slathered with chocolate fondant, fried to crispy creamy doughnutty goodness and even poached in water and then sauteed in brown butter.

Pate Choux - June 11, 2006 - a great class with The Bonus: Doughnut Choux! I went for Fun (and learned new secrets). All you need is butter, sugar, flour, water, salt, eggs...Shuna is a Goddess. Thank you!
