Kirkham's Lancashire from Neal's Yard is an incredible and delicious cheese (and was almost a "lost" cheese after WWII, when production dropped to almost nothing).
I found it here in San Francisco at the Ferry Building and have loved it ever since; thrown under a broiler on bread it makes the best cheese toast, taking on a custard like consistency. Served with Eccles Cakes, pure heaven.
