Nice but, it seems like you're playing it safe with the main of eggplant parm...I thought I'd see something a bit more on the edge =) Good luck with it all, over all it is an ambitious menu!!!
Andy, Playing it safe with home made Eggplant Parmesan for 40 people-- are you joking?! This is an all day affair if you want it done right. Just the frying of the eggplant alone took @MsMarmitelover 6 HOURS!! I'm really glad she made it as the entree-- I have often made it for staff meal at restaurants I've worked because I can let a sauce simmer for hours... Try it all one day from scratch (yes, make your own bread crumbs) and you'll see it's no small task. But beyond all that-- it's amazingly worth it! ~ Shuna
